The best shepherd's pie EVER

About a year and a half ago, I met my dear friend Tiffany. The first time she invited us to dinner, she made the most awesome shepherd's pie I have EVER put in my mouth. That's what we had for dinner tonight. It takes a little time to make, but is so very worth it. It's not a hard recipe, just involved.
 
First, boil your potatoes (about 4 or 5 medium red potatoes), drain, add milk (or 1/2 and 1/2) and butter to taste, beat with hand mixer.
While potatoes are boiling, cook 1 lb. hamburger meat in skillet (like cooking for tacos).
Make a packet of brown gravy (it's waaaay easier than making homemade gravy and tastes just as good...I use McCormick's). Pour gravy over meat and stir it up.
Drain 2 cans of whole kernel corn.
Grate some extra sharp cheddar cheese (as much or as little as you like...I use a whole package).
Smooth mashed potatoes on bottom of 9x13 pan. Spread meat/gravy evenly over potatoes, followed by the corn. Top with a generous amount of cheddar cheese.
Bake for 15 minutes at 350 degrees. (And then set your oven to broil for just a few minutes, it makes the cheese just a little crunchy and golden.)
Then have a sit and enjoy:o) For us, it's great, because we can eat on this for more than just one meal. A little extra work in one night means easy dinner for another night;o)

Our new addition

Meet Homie. He's our new fishy. Jason got him for me for Easter. Since we can't have a puppy at our townhouse, he is our pet. Hopefully we will find somewhere new to move where we can have a dog after our lease is up. And hopefully Homie will still be around to move with us. I think he is probably the prettiest beta fish I've ever seen. He's such a pretty, bright blue color. I think he likes his new home. Jason did good picking out the vase, water lilly, ribbons, and rocks for the bottom. He (and his watery home) fits into our living room just fine:)

A Special Person's Birthday!

My Momma!!! Today is her birthday, so please be sure to go give her lots of love and birthday wishes! I love you Momma, and I hope today is wonderful! You are the best mother to us three girls, best mother-in-love to our hubbies, best grammie (mimi) to our little Austin, and best wife to our Daddy...you deserve the best birthday yet!

Rambling

Back home and settled in. What a whirlwind 2 weeks. I'm resting on this Friday evening, about to go make some dinner. I love opening my fridge and cabinets the day I go grocery shopping. I love when they are stocked up. Too bad they don't stay that way for long! Tonight is turkey burgers with veggies and ranch...mmm. I will share some pictures of our week in the mountains over the next couple of days. I don't have the patience to wait for them to upload to blogger tonight, but Jason has school this weekend (and a big test!) and I will have some free time. Hope everyone has a wonderful weekend!
